Coffee from the Nueva Segovia region (and including coffee from this particular farm – El Paraiso) is regularly placed in the Cup of Excellence coffee competitions. It is one of the most prestigious awards in the specialty coffee world, evaluated by international experts with Q-graders qualifications, as well as buyers.
The owner of the coffee farm, Hipólito Acuña Morales, is a young, dynamic coffee producer. El Paraíso is just a 10-hectare specialty coffee farm in the mountainous Ocotal area of Nueva Segovia, Nicaragua. The name of the farm, “El Paraíso” (“Paradise”), reflects its fertile environment: coffee trees grow under a dense canopy of native trees, which promotes biodiversity and helps develop complex coffee flavor characteristics. Hipólito took over the family farm in the early 2010s and began developing the specialty coffee segment specifically—introducing sought-after varieties such as Gesha, Java, and Maragogype, alongside the traditional Catuai.
Nueva Segovia stretches across the mountainous north of Nicaragua along the Honduran border and is widely praised as one of the country’s most outstanding specialty coffee regions. Around Ocotal, coffee farms rise from 1000 to over 1700 meters above sea level, with El Paraíso located at 1500–1650 masl in the cool highlands. Here, misty mornings, consistent rainfall, and fertile volcanic soils slow the ripening of coffee cherries, allowing sugars and acids to develop gradually. The result is a flavor profile known for its elegance—bright yet balanced, sweet and layered with a vibrant fruit character.
