The Coffee: Red Catuai
Finca Monte Alto specializes in the cultivation of Red Catuai, a variety celebrated for its balanced sweetness and vibrant acidity. This lot is processed using the natural or dry method, where the cherries are carefully hand-picked, floated to ensure only the densest and ripest are used, and then dried on raised beds. This meticulous process, which takes around 30 days, enhances the coffee’s natural fruity and sweet notes.
