Story of the Coffee
The latest coffee from the Andrade family offers a fresh flavor perspective. The characteristic sweetness of the Yellow Catuaí beans is beautifully enhanced by the natural process. In this method, freshly picked, ripe coffee cherries are dried whole before the skin is removed.
Carefully roasted, this coffee awakens the palate with gentle cocoa notes, followed by a vibrant burst of juicy berry freshness. The flavor holds a rich praliné-like hazelnut tone, leaving a truly memorable aftertaste. With milk, the espresso reveals velvety caramel notes and a creamy, toffee-like sweetness. And with oat milk, it becomes even more complex, with deeper nutty nuances and a luxurious mouthfeel — turning into something closer to a fine dessert than your usual cup of coffee.
The “Capim Branco” coffee farm was founded back in 1901. Spanning 300 hectares, it is home to nearly 1.5 million coffee trees. The name “Capim Branco” translates as “White Grass” — a name that comes alive during the flowering season between September and November, when the coffee trees are covered in white, aromatic blossoms. The farm’s deep-rooted traditions, combined with modern thinking, support world-class coffee cultivation, harnessing the unique climate of the Cerrado Mineiro region, known for its creamy, nutty, and delicately sweet coffee flavor profiles.
Today, the farm is managed by brothers Ismael and Eduardo Andrade, together with Ismael’s son Romulo, ensuring that tradition is passed on to future generations while continuing to grow and innovate.
Yellow Catuaí coffee beans are known for their smaller size and distinctive yellow or orange hue when ripe. They offer a wide flavor profile, including sweetness, fruitiness, and floral notes. The adaptability and quality of Yellow Catuaí have made it a favorite among coffee growers around the world.

Story of the Coffee
Coffee is the most important commercial crop in Chiapas, with deep historical roots and a crucial role in sustaining small-scale farmers. Over the years, producers in this region have significantly improved their processing methods, resulting in high-quality coffee with notes of sweet citrus acidity, cherry, apple, and brown sugar (yes, a bit like our own flavor description, right?).
Chiapas is a tropical region known for its dramatic weather shifts, caused in part by the steep changes in elevation. With rich volcanic soil, over half of the population is employed in agriculture — growing not only coffee but also cocoa, sugarcane, mangoes, and bananas. Coffee is typically grown under the shade of native trees, a beautiful example of sustainable farming.
Only the ripest cherries are selected for the specialty market. After pulping, the coffee is fermented for 12–17 hours, then washed and dried on small patios near the farmers’ homes. Producers of this coffee take special pride in the exceptional cleanliness of their coffees — often removing dried cherries or parchment fragments by hand before delivering. This coffee is considered not only one of the finest in Chiapas, but possibly one of the best in all of Mexico — which is why we’re thrilled to include it in our espresso line-up.
